Guaranteeing the hygienic processing of all food products
HACCP is an internationally recognised system that helps organisations in the food industry to identify food safety risks, avoid the associated hazards, and comply with the current regulations.
The principles for applying the APPCC are detailed in the Codex Alimentarius, which lays out a series of international food standards, identifying the key principles of food hygiene applicable across the food chain; In addition, they recommend the application of criteria based on the HACCP system to increase the level of food safety, they indicate how to promote the use of these principles, and finally, they provide guidance on the specific codes required in different sectors of the food supply chain, and the basic processes and products, all aimed at extending the specific hygiene requirements in these sectors.
